Have you ever hoped for a delicious tasting desert you could bake without any sugar OR sugar substitutes or un-healthy ingredients? Those of us who put effort into avoiding sugars know that desserts are not usually on the menu plan for us. I must admit there are times were I get a bit frustrated when everyone around me is digging into a warm piece of chocolate cake with vanilla ice cream dripping down, as I sit there reminding myself that I know exactly how good it tastes and end up relying on my memories to fulfill me. Of course sometimes I'll have a few spoonfuls and get my fill, however I wouldn't mind having an alternative in these situations where I could indulge with more than just a few spoonfuls! And yes, there are times within our own house where I look around and wonder where all the 'good' snacks are only to remind myself that I don't allow the processed snacks in our house in the first place. (Duh) But I do feel better for keeping the bad food out and the good food in, 90% of the time.
There have been many a time walking the long aisles of Whole Foods when I have hoped that a desert would pop up that I had not already read the ingredient label for 100 times, or that it would be something delicious and sweet, with no gluten, no sugars and no bad oils. Of course, this has never happened. I have probably read all of the cookies labels, all of the Gluten Free baking mixes, all of the snack bars, etc. looking for that 'perfect sweet healthy snack' but to no avail. Until now, the only sweet 'deserts' that I eat in a package have been the Fruit & Nut bars which are sweetened with dates.
So allow me to introduce you to Wellness Bakeries! By some miracle I came across the founder/recipe formulator a few weeks ago and couldn't believe what I heard coming from this amazing woman's mouth! Kelley Herring is one of those people who becomes more and more interesting as you get to know her. She studied ingredients in foods and how they specifically affect us once we eat them as well as educates people on the nutritional content of the foods they are eating. She has also authored an entire book series through her Healing Gourmet company. More about that in the next write up when I review her books!

My daughter and I baked the Chocolate Bliss cake last week and couldn't believe how amazingly delicious it was! I mean, DELICIOUS! So much so, that we wanted our friends and family to taste it. Not only is it 95% Gluten Free, (soon to be 100%), but it's made with a new sugar alcohol formulation that blends Stevia and Erythritol which is a sugar alcohol that is derived from vegetables which is a zero-glycemic sweetener and is also safe for diabetics.
